Kintoki grass, a type of vegetable from Kaga.

Kintoki grass is a fascinating plant with dark green leaves on the top and reddish-purple on the underside.

It was given this name because its color resembles that of a sweet potato.

I like that reddish-purple color and often use it in my paintings.

Green and reddish-purple – this is an exquisite contrast that makes both colors stand out.

The Okinawan spinach itself has an exceptional sense of color.

In that case, I thought the background must be a deep black.

If you remove the leaves from Kintoki-sou (Okinawa spinach) and boil it, the color becomes even more vibrant.

Its slimy texture makes it delicious when served as a blanched dish.
