A thick cucumber, a Kaga vegetable grown in Kanazawa City.
It's more than twice as thick as a regular cucumber.
Kanazawa's home-style dish, "Kaga Futokyuri no Ankake," involves peeling the cucumber, removing the seeds, simmering it in broth, and then topping it with a sauce made from ground meat and shrimp. However, boiling or stir-frying is the most suitable cooking method for this dish.
I peel the skin in places, cut it in half lengthwise, remove the seeds, rub it with salt, let it sit for a while, and then pickle it in the rice bran bed.
This will make really delicious pickles.
