The "Gensuke radish" is short and stout, with a cylindrical shape.

It is one of the most representative vegetables of Kaga.

Her endearing appearance is reminiscent of a simple girl from a snowy region.

It is said that around 1942, during World War II, Saichiro Matsumoto of Uchiki-cho, Kanazawa City, crossbred a variety introduced by Gensuke Inoue of Aichi Prefecture with a local Nerima-type radish to develop this variety.

Where did that enthusiasm come from, the passion to create new varieties during wartime?

The plants must remember the image of me wandering through the fields, dreaming of peaceful days.

More than 80 years have passed since then.

I savored the soft and moist "Gensuke radish" in the oden,

I drink beer, savoring peaceful happiness.
