Female snow crabs, caught in the Hokuriku region from early November to the end of December (approximately two months), are known as "Kobako crabs" and are a winter tradition.
Although about half the size of a male, the vibrant orange roe inside, the granular roe outside, and the exceptional taste of enjoying the crab miso together with the crab meat are unique to the female snow crab.
As a bridge to New Year's Eve, the end of the year, snow crabs appear in our daily lives.
While it's traditionally served boiled with crab vinegar, it's also delicious in a hot pot.
It has a presence that overwhelms the other ingredients.
