In the Hokuriku region, the yellowtail (buri) is a fish whose name changes as it grows: "kozukura → fukuragi → gando → buri." Only fish over 80 cm in size are called buri, and among them, "kanburi" (winter yellowtail) caught in the middle of winter has firm flesh and is so fatty that it repels soy sauce. When serving it as sushi, grated daikon radish is placed on top.
If you were to ask me what my favorite set meal is, I would answer without hesitation that it's the sashimi set meal. And among the different types of sashimi, my absolute favorite is yellowtail.
Even small yellowtail or amberjack will do. Their deep, rich flavor pairs perfectly with freshly cooked rice, creating a bond that feels eternal.
The appearance of the "Noto winter yellowtail" is silent and dignified.
